How do you scrunch hair? What product?

Hey(:, my hair Is not amazingly thick but not to thin Its right in the middle. My hair will scrunch for 5 minutes the product will soak up the wettness and dry just leaving a poof! So any ideas of how you do your hair or products would help so much! Thanks(;
